Kroger Chef Goes Catering
"Steven Sims, the top chef for Kroger in central Ohio, will leave the grocery chain and start a catering business shortly after Labor Day.
Steven's Catering is expected to open at 1221 Cheasapeake Ave. in 1,400 square feet of a free-standing building. The focus
will be on corporate catering, but Sims said he also will do tailgate parties and make office deliveries.
Sims has hired two experienced chefs -- Jennifer Earl, a Baltimore Culinary Institute graduate; and Kathy Tidd, pastry chef.
Sims, a graduate of the Columbus State Community College's culinary program, spent a number of years as Kroger's corporate chef overseeing
delis in 12 superstores in central Ohio.
Sims, while using deli in his new venture's name, said he plans to avoid processed meats used in many delis.
'We intend to cook all our meats from scratch,' including whole turkeys in time for the holidays, he said.
Sims said turkeys will be a specialty the rest of this year. Whole birds will be marinated in a maple brine, roasted and carved from the bone.
